This 1er Cru was whole-bunch pressed, wild-fermented and aged in older barrels (up to seven years old) for 18 months before bottling. Aromas of almond, orange/lemon oil and orchard fruits waft from the glass, melding with perfectly judged, classy oak. The palate is mineral-inflected and gently textured, with both attributes growing in intensity as the wine takes on air. What we love about this release is the level of tension and grip Defaix has found to balance the ripeness of the year. The low-managed yields lend calibrated acidity, elegant shape and length to a great value white Burgundy, that will provide enormous drinking pleasure from day one.
