Not a box-tree in sight with this Fume Blanc, in-fact it could be described as a Sauvignon Blanc for Chardonnay lovers; evolving in the glass as the chill wears off. On the nose it sits in a floral/citrus spectrum when cold but evolves into subtle stone fruits as it comes up to temperature. The palate is vibrant and playful with an acid line that builds length and carries the primary fruit. The battonage and softness from the oak brings an element of butter and cream with texture layering to create intrigue. Whole bunch Sauvignon Blanc was direct pressed and cold settled overnight before racking off rough lees to seasoned French barriques for primary fermentation. Gentle stirring on lees took place monthly for 8 months during elevage. The wine was then racked off lees and let to settle in tank prior to bottling in November 2022.
