The whole bunch grapes got flat by feet and then pressed over night by the vertical basket press. No enzyme, no additives and no SO2 added. After settled for 2 days, the juice was moved to barrels and then natural ferment kicked off. Only old neutral barrels used for fermentation and maturation for 16 months. No batonage. Natural MLF was completed fully in this period. Then the wine was racked to a VC tank with 5ppm of SO2 added on 23rd August 2021. The wine was bottled on 15th September 2021 with 10 ppm of SO2. No finning and no filtration. The wines is released after over a year bottle aging.
