Pinot Noir - also from the ‘Les Lormes’ lieu-dit in Pommard. Except this wine is made from the old vines planted in 1949, on clay and limestone soils, and is 100% whole bunch. Three day cold soak, followed by semi-carbonic maceration, with a little punching down afterwards for extraction. Aged in 228L seasoned barrels for 12 months. Settled in tank for a further 5 months. Not fined or filtered.
Incredible perfume that bursts out of the glass. An array of red fruited prettiness – raspberry, strawberry, cherry - all framed by gentle spice. Violets poke their head through. Light palate, with crunchy red fruits. Super fine tannins give gentle structure. Extremely fresh. Chalky finish, with lingering delicate spice.
