This traditional example (dark pink) comes from a four hectare, south facing vineyard planted in 2001 to limestone soils at 350 metres. The fruit is destemmed. There is no pressing, just the free run juice spontaneously fermented in temperature controlled stainless steel. Unfined, unfiltered, wonderful.
“Light red-pink. Raspberry, cherry skin and spice cake on the nose, with a subtle floral quality adding complexity. Juicy and fresh, this nicely concentrated Rosato boasts mineral-accented red berry flavours and slow building spiciness. Closes long and tangy, with greater stuffing and a bigger fruit-forward profile than some recent vintages.
