Harvested by hand 6-7/04. 19% whole bunch, rest destemmed to open vat for wild ferment. Pressed 15/04 to tank, then racked to old 500L puncheons with fine lees. Natural malo late spring, then racked 14/02/2023. Racked to bottle 25/03/2023 with no adds.
