Carbonic maceration is used in this wine to create a drink that is light and fruit forward, with a brightness and acid profile that is all about drinkability. The Nero d'Avola and Aglianico are hand harvested separately, whole bunches dumped straight into one tonne fermenters, sealed up, pumped full of CO2 and left alone for 2 weeks. After this time, the musts are pressed off skins to finish ferment, the wine then left to go through malo and elevage in neutral French hogsheads.
For the Negroamaro, we crush and destem, then allow to sit overnight on skins before pressing off for fermentation, making a darker, Italianate rose.
Bright and packed full of juicy berry flavours, almost unctuous on the nose with ripe dark fruits which foreshadows a wine that is almost too easy to drink. Crunchy acidity and a very light line of tannin that grips the tongue for a moreish generosity, our Light Red is a joyous, fun drink. Throw it in the fridge on a hot day and watch the bottle disappear.
