This cuvée from Champagne Pierre Gerbais is from the 2020 vintage, grown in the village of Celles-sur-Ource in the Côte des Bar. It’s a blend of pinot noir (50%), chardonnay (25%), and pinot blanc (25%), sourced proportionally from the domaine’s holdings on Kimmeridgian marl and limestone soils.

Certified sustainable since 1996 (Ampelos), the fruit is hand-sorted and gently pressed with a traditional Coquard press. Vinified without added SO2, and primary and malolactic fermentations take place in tank. Secondary fermentation uses cultured organic yeasts, with the wine spending 30 months on lees before disgorgement. Dosage is Extra Brut at 3 g/L.
