The Carbone cuvée is made from Cabernet Franc, grown on clay soil rich in carbon and granite. The average age of the vines on the plot is 70 years. The harvest is entirely de-stemmed and no pigeage or pumping over is carried out: the goal is infusion and not extraction. Carbone is aged in barrels , 30% new for 12 months before bottling.
