Sauvignon Blanc 2019
2019 Ephemera Sauvignon Blanc, Yarra Valley, Rhen Dodd & Janelle de Gabriele - an experiment into oxidative winemaking, the the fruit was destemmed and left on skins for 2 days before pressing to barrel. Post ferment the barrels were slightly topped then left for 18 months. The barrels developed a natural flor. After 18 months the wine was racked with a small sulphur addition prior to bottling. The wine has rested in bottle for 7 months.
