Pan Opticon

After a few years trialling different percentages, 2025 sees a return to the original composition of 85% Riesling, 10% Pinot Gris and 5% Gewurztraminer. A perfect vintage really allowed the Riesling to shine without the risk of overpowering acidity and also allowing for a completely dry styled field blend. Without a doubt our favourite rendition of this wine, so pure, fresh and aromatic. Myer lemon, lemon myrtle, white flowers and apricot marry perfectly to the crisp yet well weighted palate. Acid drive is strong here, but focussed and balanced.
